Beetroot Hummus Toasts – A Colourful, Healthy Snack

A Sunday Afternoon in Dadi’s Kitchen
The winter sun streamed lazily through the window as Dadi placed a bright pink bowl on the table.
“Dadi, yeh pink ice cream hai kya?” Chutki asked, her eyes widening. “Arre nahin, yeh toh hummus hai… beetroot hummus!” Dadi laughed, scooping the creamy mixture onto slices of warm toasted bread. Chotu leaned in for a sniff, while Coopie wagged his tail hopefully, clearly approving of the bright creation. The toasts were topped with crunchy cucumber slices and juicy cherry tomatoes, looking like little pieces of art on a plate. As they took their first bite, Chotu declared, “Dadi, yeh toh sandwich bhi haraata hai!” and Coopie barked as if in agreement.
Ingredients (serves 4)
- 1 cup boiled chickpeas
- 1 small beetroot, boiled & peeled
- 2 cloves garlic
- 2 tbsp lemon juice
- 1½ tbsp sesame seeds (or 1½ tbsp tahini paste)
- Salt to taste
- Water as needed (for blending)
- Whole‑grain bread slices, toasted
- Cucumber slices, cherry tomatoes for garnish (optional)

Method
- In a blender, combine boiled chickpeas, beetroot, garlic, lemon juice, sesame seeds/tahini, and salt.
- Blend until smooth, adding water gradually to get a creamy consistency.
- Toast the bread slices until golden and crisp.
- Spread a generous layer of beetroot hummus on each slice.
- Garnish with cucumber slices, cherry tomatoes, or any fresh salad topping.
- Serve immediately and enjoy.
